DESCRIPTION

The Garganelli were apparently invented by a cook from Imola at the service of Cardinal Cornelio Bentivoglio of Aragon. They are a tasty type of ribbed egg pasta. The most typical seasonings are made with prosciutto and peas sprinkled with copious parmesan cheese, or with a sausage-based meat sauce.
